Physical and chemical properties of sodium alginate

 

1. Form Sodium alginate is white or light yellow powder, almost odorless and tasteless.

 

2. Solubility Sodium alginate is easily soluble in water, but insoluble in organic solvents such as ethanol, ether and chloroform. Dissolved in water to become a viscous liquid, sodium alginate powder becomes wet in water, and the hydration of the particles makes the surface sticky, and then the particles are quickly bonded together to form agglomerates, and the agglomerates are completely hydrated and dissolved very slowly. Sodium alginate is more difficult to dissolve in water if it contains other compounds that compete with alginate. Sugar, starch or protein in the water will reduce the hydration rate of the sodium alginate and the mixing time will be prolonged. The pH value of 1% aqueous solution is 6-8. 

  

3. Combination with other ions Among the metal salts of alginic acid, except for Na ion, K ion, Mg ion, and ammonium ion, which are soluble in water, other metal salts are insoluble in water. Taking advantage of this property, calcium alginate gel can be formed by contacting the colloidal solution of sodium alginate with calcium ions. The gel formation process can be controlled by adjusting the pH value, selecting an appropriate calcium salt and adding a phosphate buffer or a chelating agent.

 

4. Stability Dry sodium alginate is quite stable when stored in a well-sealed container at 25°C and below. The sodium alginate solution is stable at pH 5-9, and the calcium gel formed by sodium alginate is thermally irreversible.
