sodium bicarbonate is white powder or opaque monoclinic system with fine crystals. Odorless and salty in taste. The solubility in water is lower than that of sodium carbonate. The solid gradually decomposes to form sodium carbonate, carbon dioxide, and water above 50 ℃, and completely decomposes at 270 ℃. Sodium bicarbonate is an acidic salt formed by the neutralization of strong bases and weak acids, which exhibits weak alkalinity when dissolved in water. This characteristic is often used as a leavening agent in the food production process.
Application:
1.
Alkaline agent: used as an acidity regulator and chemical leavening
agent. Often formulated with ammonium bicarbonate as a leavening agent
for biscuits and pastries.
2. Used for blanching and removing
astringency in food. Because it can increase the pH value, it can
improve the water holding capacity of proteins, promote the softening of
food tissue cells, and promote the dissolution of astringent
ingredients.
3. Used in industries such as food, medicine, film
production, tanning, mineral processing, metallurgy, fiber, rubber, etc.
It can also be used as a detergent and fire extinguishing agent, as a
fermenting agent in the food industry, and in inorganic synthesis and
pharmaceutical industry for the treatment of acidemia. It can be
directly used as a raw material in the pharmaceutical industry. It can
also be used for film production, tanning, mineral processing, smelting,
metal heat treatment, fiber, rubber, and agricultural soaking. At the
same time, it can also be used as detergent, foam extinguishing agent
and bath agent for wool.
