Citric acid, also known as citric acid, chemical name 2-hydroxypropane-1,2,3-tricarboxylic acid. Structurally, citric acid is a tricarboxylic acid compound and thus has similar physical and chemical properties to other carboxylic acids. When heated to 175°C it decomposes to produce carbon dioxide and water, leaving some white crystals. The role of citric acid

Citric acid is mainly used as an acidulant, a solubilizer, a buffer, an antioxidant, a deodorant, a flavor enhancer, a gelling agent, a toner, and the like. In addition, citric acid has the functions of inhibiting bacteria, protecting color, improving flavor, and promoting the conversion of sucrose. Citric acid also has a chelating effect, which can remove certain harmful metals. Citric acid can prevent oxidation caused by enzyme catalysis and metal catalysis, thereby preventing quick-frozen fruits from changing color and taste.

Main uses of citric acid

Used in the food industry: Because citric acid has a mild and refreshing sour taste, it is widely used in the manufacture of various beverages, soft drinks, wine, candy, snacks, biscuits, canned juice, dairy products and other foods. Among all organic acid markets, citric acid has a market share of more than 70%, flavoring agents, and can also be used as antioxidants for edible oils.

For environmental protection: citric acid-sodium citrate buffer solution is a desulfurization absorbent with great development value due to its low vapor pressure, non-toxicity, stable chemical properties, and high absorption rate of SO2.

For sterilization: the combined action of citric acid and 80°C temperature has a good effect on killing bacterial spores, and can effectively kill bacterial spores polluted in the pipeline of the hemodialysis machine, which is very beneficial to food hygiene.

Used in medicine: citrate ion and calcium ion can form a soluble complex that is difficult to dissociate, thus reducing the concentration of calcium ion in blood and hindering blood coagulation. This product is used as an in vitro anticoagulant during blood transfusion or laboratory blood sample anticoagulation.
