Description

Red Yeast Rice is produced by the Monascus purpureus with the rice and water as raw materials in the solid-state fermentation. According to the results from HPLC analysis, the Monacolin K in the natural Red Yeast Rice is mainly in the form of acid form Monacolin K, instead of the lactone form. The results demonstrated this product is truly made from fermentation process. Another characteristic feature of this product is that there is no citrinin.

The secondary metabolites of red yeast rice in the fermentation process include: moracolin series (such as K, J, L, M, X, etc., mainly Monacolin K), Q10, γ-aminobutyric acid, glucosamine , lecithin, flavonoids, unsaturated fatty acids and other functional components. In addition to a large amount of starch, rice also contains a large amount of metabolites such as protein and fat. Under the action of various enzymes contained in Monascus, it also produces a variety of essential amino acids and unsaturated fatty acids. Active enzymes and sugars are beneficial to human health.
