What is the difference between edible gelatin and industrial gelatin?
2022-03-16
What is the main ingredient of edible gelatin? What is it for? Edible gelatin is the horns of pig, cow and horse hides that are removed, sterilized and steamed into juice, and then dehydrated to make rubber strips, films and powdered granular substances (usually powdered granular gum). It is an important ingredient and additive in the food industry, and is often used as a gelling agent, stabilizer, emulsifier, thickener and clarifying agent in the production of meat products, cakes, ice cream, beer, juice, etc.

What is industrial gelatin used for? For the manufacture of fiber textiles, insulating materials, paper, holographic materials, etc. In industrial glue, the manufacturer is usually referred to as the protein glue used to extract hydrolyzed animal protein gelatin, the feed glue specially used for feed additives is called feed gelatin, and the match-specific glue used in the match industry is called match gelatin, which is used for Hot melt gelatin for packaging and other products is called hot melt powder.

What is the difference between gelatin and collagen? The difference lies in the molecular structure. Collagen has a complete triple helix structure and its original molecular weight is about 300,000. Now, through biotechnology, macromolecular collagen can be hydrolyzed into small molecular collagen with molecular weight less than 3000 using protease. A molecule of this size can be used in the human body, only the intestines can absorb it. If the average molecular weight can be less than 2000, it is a higher-grade collagen; while the molecular weight of gelatin is irregular, as high as several million, as small as tens, so it does not have the activity of the original organism.

What is the difference between industrial gelatin and edible gelatin? The two are mainly the difference in purity. Edible gelatin is a refined product of collagen from cattle, sheep and pig bones or marine organisms. It is a pale yellow and scented hard granule that requires an alkalizing process. Industrial gelatin is made from the collagen of pig, cattle, sheep bones and some additives by alkalization and granulation, emphasizing the adhesion. The color is dark and has a special smell. Because industrial gelatin contains mostly spoiled and incompletely filtered sodium hydroxide, it is harmful and inedible.
